The Aroma Chemistry department (150h) belongs to the Institute of Food Science and Biotechnology and deals with the research of natural aromas and their generation by means of catalysis by microorganisms. We are seeking qualified support for our research project “Formation of alkylpyrazines in the basidiomycota Flammulina velutipes and Mycetinis scorodonius: characterization and biogenetic molecular pathways. ”The position is initially limited to 24 months. An extension is possible if the candidate intends to pursue a doctorate and is suitably qualified. This project investigates the molecular mechanisms of alkylpyrazine formation in the basidiomycetes*F. velutipes*and*M. scorodonius*. Using modern analytical methods as well as biochemical and isotope-based approaches, the enzymes and biosynthetic pathways involved will be elucidated. Furthermore, a novel immersion analysis method for the extraction and quantification of water-soluble alkylpyrazines will be established. The results will make a significant contribution to understanding the hitherto poorly understood alkylpyrazine biosynthesis in fungi and provide a foundation for further evolutionary biological studies. This project aims to improve the sensory appeal of plant-based meat alternatives (PBMAs), which often lack authentic meat aroma and umami/kokumi flavor. The project’s objective is to develop a scalable submerged fermentation system using basidiomycetes and Allium species to produce natural, meat-like, and umami/kokumi-rich flavors. This will integrate expertise in fungal bioprocessing, flavor research, and enzyme biotechnology. These flavors are incorporated into PBMAs to evaluate consumer acceptance, flavor stability and release, ultimately improving taste and marketability. Postdoctoral Research Fellow position – Plant Breeding

YOUR TASKS Scientific processing of the work package and support for project coordination in this interdisciplinary project, including coordination of schedules, interfaces, data flows and milestones. Further development, implementation and validation of breeding, selection and evaluation approaches, particularly indices for nutrient use efficiency and combined quality/stability indicators. Analysis and modelling of genotype-environment interactions (G×E) by integrating phenotype, weather and, where applicable, soil data (envirotyping), in order to evaluate performance, plasticity and stability. Comparison and evaluation of different cultivation methods in terms of yield and quality, and derivation of conclusions for breeding purposes. Further development of quality trait recording and evaluation (including baking quality and process parameters), with consideration given to protein-related effects (e.g. grain protein deviation and utilisation efficiency). Preparation, documentation and communication of results (reports, publications, presentations and transfer to breeding and practice), as well as support for third-party funding and collaborative activities. YOUR PROFILE Completed a doctorate (Dr rer nat/agr) in Plant Breeding, Quantitative Genetics, Biometrics/Biostatistics, Agricultural Sciences or related disciplines. Very good knowledge of statistical modelling and evaluation of complex experimental and multi-environment datasets (e.g. mixed models, G×E, stability parameters); proficient in R. Experience with ASReml (or comparable mixed model tools). Experience in scientific project work, ideally including the coordination of work packages/interfaces, as well as structured documentation and reporting. Very good written and spoken English (publications/presentations). Good German skills are advantageous. Postdoctoral Research Fellow position – Forest Genetics

Description Our research team for Forest Genetics at the Albert-Ludwigs-Universität Freiburg investigates the genomic and epigenetic basis of adaptation and acclimation in temperate and tropical tree species. Our research is carried out in natural populations as well as in greenhouses and climate chambers, and we have experience collecting and analyzing genetic, genomic, phenotypic, and environmental data. For our team, we are seeking a postdoctoral researcher with experience analyzing genomic datasets in non-model species and the motivation to work in tree genetics for the next 4–6 years. The postdoctoral researcher will have the opportunity to establish his/her own profile in forest genetics research and teaching and will be integrated into some of our ongoing research projects (https://uni-freiburg.de/enr-forgen/). After a training phase, you will also support the working group with data management on DataPlant (https://www.nfdi4plants.org/). The position has a teaching obligation of four semester hours per week. This includes a course on bioinformatic analysis of genetic datasets for MSc students, which should be coordinated and taught independently. Contributions to a course on forest genetics lab and data analysis skills for MSc students and a lab practical course for BSc students are also expected. You have experience in analyzing genomic data, especially RNAseq and whole-genome sequencing datasets.
