PhD position in Dietary Fiber Modification through Malting and Fermentation Processes

Your tasks

• Project participation & networking – You will actively participate in an interdisciplinary research project and, with our support, build a diverse network of partners from science and industry.
• Research questions – You investigate how dietary fiber fractions in pulses and plant-based food matrices change through biological and process engineering processes.
• Product innovation – You characterize and develop plant-based food components for the production of innovative alternative products.
• Knowledge transfer – You prepare your research results for internationally renowned journals and present them at scientific conferences.
• Project management – ​​You take responsibility for the planning, organization and coordination of tasks within the research project.
• Further development – ​​You will systematically expand your professional and methodological skills with the offerings of the Graduate Academy.

Your profile

• Completed university studies – You have a master’s degree in food technology, food chemistry, nutritional science, brewing and beverage technology, chemical engineering or a comparable scientific-technical degree program.
• Technical expertise – Ideally, you have initial knowledge in food analysis, especially in the characterization of dietary fiber, carbohydrates, proteins or similar food components.
• Interest in plant-based raw materials – You are interested in plant-based raw materials and their processing, as well as in the interplay of material composition, structure and functionality of foods.
• Scientific curiosity – You enjoy developing and addressing scientific questions independently and like working on interdisciplinary research topics.
• Independent working style – You work independently, in a structured and responsible manner, and approach tasks reliably and in a solution-oriented way.
• Language skills – You have very good German and English skills, both spoken and written.
