Research Assistant / PhD Candidate in the field of Aroma Chemistry, 150 hours per week (m/f/d), pay grade 13 TV-L (50%), starting immediately

The Aroma Chemistry department (150h) belongs to the Institute of Food Science and Biotechnology and deals with the research of natural aromas and their generation by means of catalysis by microorganisms.

We are seeking qualified support for our research project “Basidiomycota-mediated fermentation for the production of natural meat-like flavoring and mycelia-based umami/kokumi-rich flavoring from Allium varieties: from process development, characterization to application in soy- and pea protein-based meat patties.” The position is initially limited to 24 months. An extension is possible if the candidate intends to pursue a doctorate and demonstrates suitable qualifications.
This project aims to improve the sensory appeal of plant-based meat alternatives (PBMAs), which often lack authentic meat aroma and umami/kokumi flavor. The project’s objective is to develop a scalable submerged fermentation system using basidiomycetes and Allium species to produce natural, meat-like, and umami/kokumi-rich flavors. This will integrate expertise in fungal bioprocessing, flavor research, and enzyme biotechnology. These flavors are incorporated into PBMAs to evaluate consumer acceptance, flavor stability and release, ultimately improving taste and marketability.

The following qualifications are required:

– Completed university degree in food science, food chemistry, (food) biotechnology, biological chemistry or a related field of study

Experience in aroma analysis and analytical or organic chemistry (GC-MS, HPLC), fermentation, and enzyme biotechnology is advantageous.

– Very good German (native speaker or fluent) and good English language skills (spoken and written) are mandatory.

– Willingness to familiarize oneself with new subject areas and to participate in cross-project teamwork; high motivation and scientific commitment; ability to actively communicate ideas and results; ability to work independently
